4–6 ripe plum tomatoes, chopped
1/2 cup chopped onion (red or white)
1 jalapeno chili, stemmed, seeded and finely chopped
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1/2 teaspoon salt or to taste
1/2 teaspoon fresh black pepper or to taste
Directions: In a medium-size mixing bowl combine all ingredients until well blended. Cover and let stand for at least 30 minutes to let the flavors blend. For a smoother salsa, put all ingredients into your blender or food processor and pulse the mixture a few times until it’s at your preferred consistency. Refrigerate and use within 2 days.
